Although all of their wines are high-density, this is based on our closest-planted vines (20k\/ha and 33k\/ha), with the fermenter topped up with some neighbouring vines if need be.\u003c\/p\u003e\n\u003cp bgcolor=\"#ffffff\"\u003eFermentation in 2024 was in a large wooden Stockinger cask, with the cap submerged. It was a short and fast ferment (as it was for all our Pinot), and only 10% whole bunch was used. The resulting wine is a Pinot of great purity, singularity, perfume and very fine tannins. As always, this is much more tightly wound than the more seductive \u003cem\u003eBetween Two Mountains\u003c\/em\u003e. It will really benefit from some aging, at least five years. If you drink it young, just take your time and give it a gentle decant to help it open.
