Serious stuff! In the past, we’ve done a semi-carbonic Shiraz and drained off the free run. This year, we’ve added the pressings for a bit more oomph and included a splash of semi-carbonic Cabernet Sauvignon. It’s a solid wine, with the characteristic lightness that Canowindra fruit brings.
