When Dave isn’t working as the head chef of one of our favourite Melbourne wine bars, Embla, he’s making delicious vermouth! Made using Moscato from a 30-year-old vineyard, he adds pineapple quinces, saffron, blood orange, rhubarb root and Australian wormwood.
