From 45-year-old vines on clay and limestone soils. Bought and cultivated organically by Paul and Willy since 2017. The plot is in Chassey-le-Camp, just south of Santenay, near Roman ruins. Vinification commences in tapered wooden vats. Whole bunch maceration for 13 days, with light daily punching down. The wine is then aged in used barrels for one year. No fining or filtration. 10mg/L SO2 before bottling. Certified organic. 12% alc
