Tim Ward I'll Fly Away Cuvée MJ NV Fiano

This wine takes Tim Ward's beloved pét nat method into an innovative new direction, combining it with the traditional sparkling wine making method by blending multiple vintages with a freshly fermenting one. This is a complex wine with apple, lemon and lime fruit characters, but also with secondary nutty and autolytic characters, the bubble is gentle but persistent and the finish is softly sweet with a couple of grams of residual unfermented grape sugars.
