Maidenii is the crossover between French winemaker Gilles Lapalus and Australian bartender Shaun Byrne. The pair craft vermouths of unreal nuance and complexity, tapping into Australia's, and primarily Victoria's, incredible botanical wealth of leaves and seeds, flowers and roots, spices and herbs. Now borrowing Yuzu from further-flung shores, alongside some native citrus also; the wine base is amphora fermented Greco from Heathcote.
